Arbre incontournable de la région méditerranéenne, l’olivier (variété Olea europaea) trouve son terroir sur des terres rocailleuses, aux faibles précipitations et gorgées de soleil. Il en a fait son territoire. Les fruits de l’olivier, les olives, sont devenues un symbole et une culture culinaire de cette région. L’olivier est réputé immortel.
C’est un des arbres et des bois les plus résistants au monde. Certains arbres sont centenaires voire millénaires et ont jusqu'à 3000 ans. Tortueux, l’olivier a un bois compact. Sa densité est 20% plus importante que le hêtre. Sa fibre est donc très serrée. La couleur irrégulière du bois d’olivier et de ses veines n’apparait que lorsqu’il est poli, et souvent huilé pour faire ressortir son caractère et son authenticité. Chaque objet en bois d’olivier est donc unique. D’ailleurs, il n’y a pas d’industrie pour ce bois mais plutôt uniquement des artisans. La Tunisie est très réputée pour ses articles en bois d’Olivier, notamment la ville de Sfax qui est la capitale de son artisanat.
